Attention all foodies, this is a post for you. I’ve got a good old recipe post of simple and quick to make, yet delicious food. Cooking is something I’ve really started to enjoy and get more over the past year or so, and I’m enjoying learning more recipes, and about what types of flavours and dishes I enjoy. For this post, I’m working with Aldi on sharing with you a delicious recipe I found from their website. This was one amongst hundreds of recipes available for you to access anytime, anywhere. Whether you’re searching for ways to spice up your breakfast, for quick and healthy lunch ideas, or wholesome family dinners, there’s plenty of inspiration and recipes to chose from. I decided to make Aldi’s fish brioche recipe, which I paired with their prepared lemon tart, as a no fuss, summer evening meal the whole family could enjoy.

Fish Brioche (serves 4)
4 Specially Selected Brioche Burger Buns
4 Northern Catch Battered Chunky Cod Fillets
200g Sweet Harvest Mushy Peas
80g Bramwells Tartar Sauce
30g Fresh Rocket
I also added frozen sweet potato fries, as I thought they’d make a perfect side to the meal.
Pre-heat the oven to 220°F/425°F/Gas Mark 7
Bake the cod fillets for 30 minutes, as per the directions on the pack.
Cook the sweet potato fries in the oven at 200 degrees (fan oven) for 20 minutes.
Toast the cut sides of the burger buns.
Heat the peas in a microwave or on the hob in a saucepan.
Place a cod fillet on top of a bun base – sprinkle with rocket and add a dollop of tartar sauce – serve alongside the mushy peas.
This meal was certainly enjoyed by me and my family, it was quick and easy to cook – just a matter of putting things in the oven, and putting it together. It was a real treat, and a great option if you’ve got in late from work and don’t want the hassle of cooking from scratch.
Lemon tart (serves 6)
Remember to keep the lemon tart refrigerated, then simply slice and serve with single cream for a no fuss, delicious summer desert.
